Find the symbol you dont want and delete it. Usually right click and delete it or find a list that allows you to add or remove them.

On your MT4 - just drag the pair you want from the MARKET WATCH into the available space. If not - right click and NEW CHART - if not - Toolbars - to the left with the + sign - New Chart...
